Madhur Jaffrey's Stir-Fried Cabbage

  • 1 small head cabbage, shredded (or try it with bok choi)
  • 3c cooked short-grain brown rice
  • 4 fresh eggs (optional)
  • 1T fennel seeds
  • 1/4c sesame seeds
  • sea salt
  • cayenne (to taste)
  • 1/2T cumin seeds
  • 1 large onion (chopped)
  • 1/4 olive or veg oil
  • 1tsp garam masala
  • juice from 1/2 lemon

Heat oil on med/high, and add the seeds, cooking until sesame seeds begin to pop.  Turn heat to medium and add onion, cooking slowly until it starts to brown.  Add cabbage and cook until almost tender. Stir in garam masala, lemon juice, salt, and cayenne (to taste). Serve over rice with a fried egg on top.
